Grilled Zucchini humus Wrap

Ingredients

  • 1 zucchini, ends removed and sliced
  • salt and pepper to style
  • 1 tablespoon vegetable oil
  • 1 tomato, sliced or few cherry tomatoes
  • 1/8 cup sliced Spanish onion
  • 1 cup kale, powerful stems removed
  • 2 slices white cheddar cheese or jalapeno Gouda
  • 2 giant Udi's protein free tortillas
  • 4 tablespoons humus

Instructions


  • Heat a frypan or grill to medium heat.
  • Remove the ends from the zucchini and slice length wise into strips. Toss sliced zucchini in vegetable oil and sprinkle with salt and pepper.
  • Place sliced zucchini directly on grill and let cook for three minutes, flip and cook for two additional minutes.
  • Set zucchini aside.
  • Place the tortillas on grill for about one minute, or simply till grill marks area unit visible and tortillas area unit pliable.
  • Remove tortillas from grill and assemble wraps, two tablespoons of humus, one slice of cheese, zucchini slices, 1/2 cup kale, onion and tomato slices.
  • Wrap tightly and luxuriate in at once.
